Fresh cashews is a concept used for two types of unprocessed cashews: raw cashews harvested right in the garden with the hard outer shell intact (still retaining a large amount of water content in the nut) and unprocessed cashews. Deeply processed (pre-processed: steamed, split the kernel, dried the seeds and peeled the outer shell).

The product Pagacas fresh cashews is a type of preliminarily processed cashews that have not been deeply processed (2nd type). Pagacas's fresh cashews include whole and broken cashews.

Fresh cashews are packed with nutrients: the fat content is more than 40% but more than 82% of these are unsaturated fatty acids, with a ratio of monosaturated fatty acids to polyunsaturated fatty acids of 4:1 is very beneficial (according to the study "Cashew nuts and processing" by author Pham Dinh Thanh). That's why fresh cashews provide a lot of nutrients and benefits for human health.

Advantages and disadvantages of whole cashews and broken cashews:

- Whole fresh cashew nuts have the advantage of being clean and large. There are appropriate aesthetic elements for food decoration. However, the price of whole beans is often twice as high as broken beans.

- Broken fresh cashew nuts (broken in half, broken in quarters, broken) have the advantage of being much lower in price than whole nuts. Suitable for making milk, salad, candy, butter, etc. The disadvantage of broken cashew nuts is that they easily bruise black, have a lot of silk on them, and need to be cleaned with boiling water before use.

Fresh cashews have many different uses:

- Processing cashew milk: cashew milk contains many nutrients such as vegetable fats, vitamins, minerals, fiber and protein. Cashew milk is very good for the nervous system, eyes, cardiovascular system and blood pressure. In addition, drinking cashew milk also helps beautify the skin, prevent cancer, strengthen the immune system and prevent anemia due to iron deficiency.

- Dish preparation: with its characteristic sweet and fatty taste, cashews are a delicious and nutritious ingredient for preparing dishes. Some dishes made from cashews include: salad, stir-fry, soup, sticky rice and sweet soup. In particular, it can also be used to make cashew candy, cashew butter and many other nutritious delicacies.

You should choose fresh cashews based on intended use and budget. In addition, attention should be paid to the rate of damaged and damaged seeds. Pagacas fresh cashews use 100% Vietnamese cashews, so they will have a richer, sweeter and more aromatic taste than foreign cashews. One of the ways to distinguish fresh Vietnamese cashews is that the seeds are small, firm, smooth. When separating the kernel, the gap in the middle is very narrow, the skin of the seed is much glossier than foreign cashews.

How to preserve fresh cashews: Normally, fresh cashews that have been ripened and processed can be stored at room temperature for 3-6 months. Pagacas recommends that customers should store it in the refrigerator or freezer so that it lasts longer and the quality of the beans is better maintained.
